For Inter-Mountain Fair of Shasta County: We stayed overnight on a Friday in April 2024, and there were plenty of sites. They are close together with about 10 ft grass strip between sites. There was no host, but we reserved/paid online. The restrooms were really clean and had three pretty large shower stalls in a large room, and plenty of hot water. A nice surprise was "the Merc", a pizza/sandwich place in town (the only place we found open), and it was hoppin! Good casual food. One star off because the sites were more like a gravel parking space, but the open space around the park helped. You go through the fairgrounds to get there, but it was well marked.
